In this post we share a yummy lunchbox recipe, that is very easy to make. These Broccoli cheese bites are from the Munch Lunchbox cookbook (which you can buy here).  This is a great recipe for using up leftover broccoli and can easily be whipped up after school.

Munch Lunchbox Broccoli cheese bites

Broccoli is one of the staples in our household. All three of my boys will eat it which makes dinner time planning easy. These Broccoli cheese bites will be a hit with your broccoli lovers.

Munch Lunchbox Broccoli cheese bites

Serves: 12
Ingredients
  • 300g cooked broccoli, drained
  • 11/2 cup grated cheddar
  • 3 eggs
  • salt and pepper
  • 1 cup breadcrumbs
Instructions
  1. Preheat oven to 190°C. Line a baking tray with baking paper.
  2. Mix all the ingredients together in a large bowl.
  3. Using your hands, form the mixture into small patties and place on the baking tray.
  4. Bake for 25 minutes, turning over after the first 15 minutes.
