School holidays are always a great time to do a bit of baking. It is something that children can help with, and leftovers can go into the freezer for term time lunch boxes.

Orange cupcakes with orange icing

These cupcakes are made with orange juice and can be frozen. The zest and icing are optional. You can also use orange juice from the supermarket.

Serves: 12
  • 100g butter, softened
  • 1 cup sugar
  • 2 large eggs, separated and whites beaten until stiff
  • 1 tsp vanilla essence
  • 13/4 cup plain flour
  • ½ tsp salt
  • 21/2 tsp baking powder
  • ½ cup freshly squeezed orange juice
  • zest of 1 orange (optional)
  • For the icing
  • 200g pure icing sugar, sifted
  • 2 Tbsp freshly squeezed orange juice
  1. Preheat oven to 180°C. Grease a 12-cup muffin tin or line with muffin cups.
  2. Combine butter, sugar, egg yolks, orange zest and vanilla in a mixing bowl and beat together thoroughly.
  3. Mix flour, salt and baking powder together in a separate mixing bowl.
  4. Add the dry ingredients to creamed ingredients, a third at a time, alternating with the orange juice and beating well after each addition.
  5. Beat egg whites until stiff, then fold into the batter.
  6. Spoon the batter into the prepared muffin tin until half full. Bake for 15 minutes.
  7. Cool cupcakes before icing.
  8. Stir 2 Tbsp of orange juice into sifted icing sugar, making a thick paste.
  9. Spread on cooled cupcakes and let this set before storing in an airtight container.
