I was inspired by Jamie Oliver’s Flavoured Salt recipes, in his book Jamie’s Kitchen. He made some chili flavoured salt in one of his Christmas shows, and that was the one I really wanted to make. However, he doesn’t give precise measurements and warned of making sure it wasnt too wet. I felt nervous about cocking up a chrissie present so I decided to make one with all dry ingredients and came up with this one: mushroom and paprika salt.

These salts are delicious sprinkled on vegetables before roasting and are particularly good on big fat oven baked wedges of potatoes.

Serves: 1 cup
Ingredients
  • 1 cup rock salt or sea salt
  • 30 gms dried mushrooms (I used porcini)
  • 1-2 tablespoons of paprika
Instructions
  1. Place all ingredients into a blender.
  2. Blitz until the salt reaches your desired consistency.
  3. Then decant into clean dry storage containers.
  4. Sprinkle on vegetables before roasting.
