Meet Karen O’Shaughnessy, Munch Sales Manager Australia. Karen is based in Melbourne and manages a large chunk of our Australian wholesale customers. Today she shares with us a great recipe for grown up Mojito Ice Pops.

Karen has a health and sports background, working as a massage therapist before having her children. The arrival of her girls developed her interest in looking at food and how we store it. She wanted to ensure that where possible she could avoid having a huge impact on the earth and steer away from our often disposable society.

Karen is originally from the United Kingdom, but has a kiwi husband and they have 2 wonderful girls. After several years in Wellington, their family is now based in Melbourne. This is Karen’s favourite Mojito Ice Pop recipe. We will share another of her Ice Pop recipes soon.

“For a treat for grown ups try this Mojito recipe, its really versatile as you can leave out the rum to make an Ice Pop for your child but who says they should have all the fun.

“Of course you need to be careful when making alcoholic pops when you have children around, we would hate for prying little fingers to discover them and think they could have one. We suggest you put them into another container in the freezer or if you have a few packets then choose one colour that is a child free zone e.g. don’t touch the blue ones, they are for grown ups only!”

Mojito Ice Pops

A fun treat on a hot day or a great dinner party dessert that you can prepare ahead.
Serves: 4-6
  • 1¼ cups fresh squeezed orange juice
  • 8 tsp raw sugar, or your favorite sweetener (raw honey for Paleo)
  • 2 tbsp lemon juice
  • 2 tbsp lime juice
  • ¾ cup water
  • 8 fresh mint leaves
  • 8 fresh basil leaves
  • 2 tbsp rum (optional)
  1. Pour all of the ingredients into a blender or nutribullet and blend until well combined.
  2. Pour into Munch Reusable Ice Pops and pop them into the freezer.
  3. Freeze for 4-6 hours, before consuming.
