  • 225g self-raising flour
  • 115g butter, diced
  • 1 medium apple, peeled and cored
  • 100g mixed dried fruit (or chopped apricots)
  • zest and juice of 1 small orange
  • 75g brown sugar
  • 1 egg
  • 2 Tbsp orange juice
  1. Preheat oven to 190°C. Line two baking tray with baking paper.
  2. In a large bowl, rub the flour and butter together until it looks like breadcrumbs.
  3. Chop or grate the apple and mix in the orange zest. Fold the fresh and dried fruit into the butter and flour mixture, then fold the sugar through with a spatula or wooden spoon.
  4. Beat the egg and orange juice together in a small bowl and stir into the batter.
  5. Place spoonfuls of the mixture onto the prepared trays.
  6. Bake for 12–15 minutes until golden and firm.
