  • 3 cups flour
  • 5 tsp baking powder
  • ¼ teaspoon of salt
  • 75 gm butter
  • 1 cup of milk
  1. Preheat oven to 200 deg C.
  2. Sift dry ingredients into a bowl.
  3. Rub butter into flour mixture until it resembles breadcrumbs.
  4. Add milk and mix quickly to create a soft dough. You may need to add a bit more milk.
  5. Knead dough. Separate dough into portions for cooking (The recipe suggests ten portions, but I made 9 large and 6 small scones).
  6. Place on a prepared oven tray.
  7. Brush tops with milk.
  8. Bake scones for 10-12 minutes.
  9. Serve warm. We served ours dolloped with jam and cream almost straight from the oven.
This served four adults and five children for morning tea. The kids gobbled them up and asked for seconds and thirds. Needless to say the adults didn't get as many as they wanted.

I think that scones are best eaten fresh. If you are not going to eat your scones immediately after they are out of the oven, you could cover them with a tea towel to keep warm and moist.
