Watermelon and cucumber salad
  • ¼ Watermelon, peeled, deseeded and diced
  • 1 Cucumber, peeled, deseeded and diced
  • 2 Tbsp Mint leaves, chopped and sprigs for garnishing
  • 2 Tbsp Yoghurt, natural, reduced fat
  • 2 Tbsp White vinegar
  • 2 tsp Brown sugar
  • 1 Garlic clove, crushed
  • ¼ cup Vegetable oil
  1. Place watermelon in a sieve and leave to drain for about 30 minutes.
  2. Place cucumber in another sieve and leave to drain.
  3. Mix chopped mint and yoghurt together and leave in refrigerator.
  4. Combine drained watermelon and cucumber in a serving dish.
  5. Combine dressing ingredients in a jar.
  6. Shake dressing and pour over watermelon and cucumber.
