Easy sweetcorn fritters

  • 50g self-raising flour
  • 1 egg
  • 200g sweetcorn either frozen or canned
  • ½ cup grated cheese
  • ½ grated courgette or carrot
  1. Blend sweetcorn until finely chopped but not puréed. Add egg and blend again.
  2. Add flour, cheese and grated courgette or carrot and combine.
  3. Heat oil in a frying pan over a medium heat.
  4. In two batches, spoon batter into the hot oil, each fritter is about a heaped tablespoon, and cook for a couple of minutes until the surface starts to bubble. Flip and cook until golden.
  5. The trick is not to get it too hot so they turn a lovely golden colour and are still soft.
  6. Serve the sweetcorn fritters on their own or with sour cream as a dip.
