Wonderland Bakes and Bites – Raspberry Vegan Juniors

This recipe is gluten and dairy free with no added sugar.
  • ½ cup blanched almonds
  • ½ cup cashew pieces
  • 1 cup diced dried dates
  • ½ cup diced dried apricot pieces
  • 2 tbsp dutch process cocoa
  • ½ tsp Fresh As dried raspberry powder
  • ¼ cup fine shredded coconut
  1. Soak dates in ½ tbsp warm water to soften.
  2. Put nuts in a food processor and whizz to a rough chop setting aside for later.
  3. Process dates and apricots, when you are happy with the consistency of the dried fruit (aiming for a smooth paste but few fruity chunks grand) add the nuts and cocoa powder for a brief whizz to combine. Add a little water if the mix is to dry.
  4. Mix the raspberry powder and coconut in a shallow dish.
  5. Roll the dried fruit and nut mix into walnut sized balls.
  6. Roll balls in the coconut and dried raspberry.
