Cheesy Green Mish-Mash Soup

Serves: 4 servings
  • 1 onion, roughly chopped
  • 2 cloves garlic, chopped 3 tablespoons coconut oil, ghee or butter
  • 6 cups roughly chopped green vegetables (zucchini / courgettes, broccoli, celery – whatever you have)
  • 1 litre vegetable or chicken stock
  • 1 cup rocket or watercress (optional)
  • 1 cup roughly chopped coriander, basil or flat-leaf parsley
  • Pinch of salt
  • Juice of 1 lemon
  • ½ cup crumbled sharp cheddar
  1. In a large saucepan, sauté the onion and garlic in the oil, ghee or butter.
  2. Add the green vegetables and stir for a minute, then pour in the stock and bring to the boil.
  3. Reduce the heat and simmer for 10-15 minutes.
  4. Stir in the rocket, herbs and salt.
  5. Turn off the heat and puree until smooth using a stick blender, or transfer to a blender and pulse. Whisk in the lemon juice and stir through the cheese.
  6. Serve hot.
